"Custard Chan is a walking compendium of all the things I love about Hong Kong. Her name and colour is a reference to Hong Kong's delicious bright yellow egg custard tarts (which I adore and ate far too many of in my early years here) and much loved by "Fatty Pang" aka ex-Governor Chris Patten."
